“From the Vineyard to the Glass” – Enography, wine tasting technique and food and wine pairing

Among the rolling hills of the Langhe and Monferrato area, immersed in the pleasant and evocative atmosphere of the Castle of Costigliole d’Asti, inside its historic Wine Cellar, where ICIF has set up a very modern tasting room with a futuristic design, with 20 single multi-functional stations for wine tasting and food and wine pairing, surrounded by a range of hundreds of prestigious wine bottle labels from different regions of Italy, you will be accompanied by a professional Sommelier instructor to discover the world of Italian wines, a world envied by many foreigners and not yet well appreciated by Italians for its potential and organoleptic facets. The program of the ICIF Course on Italian Wines and Food and Wine Pairing provides skills, as well as relating to the specific world of Italian wines through a national overview of the different regions, also related to the restaurant world, in relation to food preparations and suggestions for correct pairings, including guided tests with all the different courses of an Italian Menu, from appetizers to desserts, also including the pairing with cheeses, not only with white wines and red wines, but also with aromatized wines, sparkling wines, liqueurs and raisin wines. The program of the course ends with a field trip to go wine tasting, organized by the Institute at a local winery.

The course is in Italian and the teacher is supported by an English speaking  interpreter for foreign participants.

If a student is interested in obtaining a more complete training in relationship to the combination of the profession of a  Sommelier and Waiter and Restaurant Dining Service,  an additional week of lessons can be purchased.  This additional week-long course, the ICIF Course for Restaurant Dining Service (https://www.icif.com/en/professional-courses/course-for-restaurant-dining-service/), is held one week prior to the Course on Italian Wines  and Food and Wine Pairing.  After completion of the courses the student continues the training by doing 6 weeks of practical internship at medium-high level restaurants selected by the Institute.

CERTIFICATE

  • ICIF certificate upon completion of the course (which does not qualify or enable to carry out the  Sommelier Profession)

Monday
  • Morning (9:00 am – 12:30 pm)
    • NOTIONS on TECHNIQUE of WINE TASTING
      Theoretical introduction on the technique of tasting and tasting of No. 2 wines

 

  • Afternoon (1:30-5:30 pm)
    • NATIONAL ENOGRAPHY
      Theoretical lesson about the different denomination of Italian wines and territories of production and tasting of No. 3 wines
Tuesday
  • Morning (9:00 am – 12:30 pm)
    • FOOD and WINE PAIRING with SIMPLE FOOD
      Wine Tasting exercise with simple food, as pieces of Grana Padano cheese and tasting of No. 2 wines to choose the right pairing

 

  • Afternoon (1:30-5:30 pm)
    • FOOD and WINE PAIRING with STARTERS
      Wine Tasting exercise with No. 2 starters in pairing with n. 4 wines
Wednesday
  • Morning (9:00 am – 12:30 pm)
    • FOOD and WINE PAIRING with FIRST COURSES
      Wine Tasting exercise with No. 2 First courses in pairing with No. 4 wines

 

  • Afternoon (1:30-5:30 pm)
    • FOOD and WINE PAIRING with MEAT MAIN COURSE
      Wine Tasting exercise with No. 2 main courses with meat in pairing with No. 4 wines
Thursday
  • Morning (9:00 am – 12:30 pm)
    • FOOD and WINE PAIRING with FISH MAIN COURSE
      Wine Tasting exercise with No. 2 main courses with Fish in pairing with No. 4 wines

 

  • Afternoon (1:30-5:30 pm)
    • External visit to a Winery of the area and Wine tasting
Friday
  • Morning (9:00 am – 12:30 pm)
    • FOOD and WINE PAIRING with DESSERT
      Wine Tasting exercise with No. 2 desserts in pairing with No. 4 wines

 

  • Afternoon (1:30-5:30 pm)
    • FOOD and WINE PAIRING with CHEESES
      Wine tasting exercise with variety of cheeses in pairing with No. 4 wines
    • Delivery of CERTIFICATE of PARTICIPATION

FEES

The fee for the ICIF Course on Italian Wines and Food and Wine Pairing is 1.600,00 Euro.

If the student decides to also buy  the  ICIF Course for Restaurant Dining Service, a discount of 100 euros on the cost of this Course will be applied.

The fee for the complete course includes:

  • 1 week of accommodation at the ICIF guesthouse in small 2 bedrooms apartments with single, twin or triple rooms and one bathroom
  • Welcome dinner upon arrival on Sunday at the ICIF Training Restaurant “La Barbera” in the Castle of Costigliole d’Asti
  • Breakfast from Monday to Friday
  • Meals (lunch and dinner) in the school canteen from Monday to Friday
  • Assistance with the Student Visa application procedure (if needed)

  • Group bus transfer from Milano Malpensa airport to Costigliole d’Asti, price: € 50
  • Assistance in purchasing and activation of a new sim card
