The Italian cuisine and wine course is held in the headquarters of ICIF – Italian Culinary Institute for Foreigners, in Costigliole d’Asti, in a modern building with laboratories equipped with state-of-the-art equipment and technology.
This course has been created specifically for those professionalswho are looking for fast and complete training on the main topics of Italian cuisine. From starters to desserts using traditional or modern recipes. The topics of the course will focus on the fundamentals of Italian cuisine such as: pasta, risottos, traditional sauces, meat and fish second courses, cheese, bread, pizza, and the use of extra virgin olive oil and vinegar. The course also includes lessons on wine tasting techniques, innovative culinary technology and a visit to a PDO Grana Padano cheese factory.
The course has a duration of 2 weeks but the flexibility of the program allows the opportunity to purchase single weeks of the course based on preferred topics.
The course is held in Italian by our teachers, who will be supported by English speaking interpreters.

WEEK 1
Monday
- Aromatic herbs and spices in Italian regional recipes (cooking demo)
- Traditional hot and cold starters and the use of extra virgin olive oil and vinegar
Tuesday
- Plain and special Italian breads and breadsticks
- Neapolitan pizza, calzone and traditional focaccia
Wednesday
- Dried pasta and its traditional sauces
- Traditional and modern-creative risottos
Thursday
- Traditional and regional fresh and filled pasta
- Traditional and modern-creative restaurant desserts
Friday
- Traditional and regional gnocchi
- Fish and meat second courses
WEEK 2
Monday
- Gnocchi with special dough and modern-creative fresh filled pasta
- Furred and feathered game recipes
Tuesday
- Saltwater fish and freshwater fish second courses
- Recipes made from traditional PDO Italian cheese
Wednesday
- Traditional Italian regional cakes and small pastries
- Italian modern-creative pastry
Thursday
- Visit to a PDO Grana Padano cheese factory
- Italian wine geography and introduction to wine tasting techniques
Friday
- Innovative culinary technology (Cooking demo: vacuum cooking, low-temperature cooking and Pacojet)
FEE
- 2-Week course: 3.200,00 €
- 1-Week course: 1.700,00 €
Included in the price of the course:
- Accommodation at the ICIF guesthouse in small 2 bedrooms apartments with single, twin or triple rooms and one bathroom
- Check-in on Sunday afternoon and check-out on Saturday morning
- Breakfast from Monday to Friday
- Meals (lunch and dinner) in the school canteen from Monday to Friday
- Teaching materials (theoretical notes and recipe book)
- A complete Chef’s uniform with the Institute’s logo: jacket, trousers, apron and paper hat
