The ICIF Culinary School of Shanghai (China)
INSTITUTE OF CULINARY, CULTURE AND OENOLOGY OF THE REGIONS OF ITALY

China is experiencing an economic boom of ample proportions and Shanghai is the most advanced industrial, commercial and financial centre of modern China. The city and consequently the Chinese market lends itself to becoming very receptive to western products and Italy (its cuisine in particular) plays a primary role in the preferences of the Chinese.  
ICIF China was founded in 2004 during this remarkable period of historic and cultural change, as a result of  collaboration between the Shanghai Lingang Science and Technology School and ICIF - Italian Culinary Institute for Foreigners, with the objective of promoting the development of the Italian culinary tradition in China. It is the first, and so far the only Institute authorized by the Chinese government permitted to teach foreign cuisine. The fulfillment of this project has been made possible thanks to our Chinese partners (The Department for the Development of Trade and Industry of Shanghai and the Shanghai Lingang Science and Technology School) who supplied the building. Our gratitude also goes to those Italian Institutions who have made various contributions: The Ministry of International Commerce (renamed The Ministry of Economic Development), The Region of Piemonte and ICE – The National Institute for Foreign Trade.
The LINGANG SCIENCE AND TECHNOLOGY SCHOOL has operated in the education sector in China since 1985. Within the institute there are over 100 teaching staff who deal with tuition, training,  consultation and management issues.

The ICIF Institute of China is situated in the Nanhui district of Shanghai which is 15 km from the international airport of Pudong and 45 km from the centre of Shanghai. The school is housed in a new building with a floor space of 3500 m², comprising several classrooms where the Chinese students are taught the technique of Italian cooking, where they become familiar with the Italian taste and learn the importance and quality of typical Italian products. The school can house approximately 200 students who have the possibility of staying at the new dormitory with meals provided in the canteen of the Shanghai Lingang Science and Technology School. The ICIF teaching staff is made up of highly qualified Italian professionals.

The Courses are aimed at young Chinese cooks, sommeliers and maitre who would like to specialize in Italian cuisine by immersing  themselves  in the spirit of “made in Italy”  and becoming experts in Italian taste. The there are various types of course, from those which deal in a single topic, which last for 5 or more days, according to the requirements of the participants, and treat the following subjects: STARTERS and CONDIMENTS, THE REAL PIZZA and ITALIAN FOCACCE, FIRST COURSES, OENOLOGY, ITALIAN PATISSERIE, BREAD, ITALIAN ICECREAM, RESTAURANTS in ITALY; to those which have a duration of three or six months which encompass every aspect of Italian regional cuisine and where particular attention is paid to the education of the palate to new tastes and recognition of the quality of typical Italian products.
At the end of their course at the ICIF School of China, the students receive an ICIF diploma,  recognized by the Chinese government which certifies their specialization in The Cuisine, Culture and Oenology of the Regions of Italy, hence becoming ambassadors of the cuisine and of the excellence of Italian food products.
