China is going through a huge economic growth and Shanghai is the most advanced industrial, commercial and financial centre of today’s China. This city and the Chinese market are, by consequence, very receptive towards western products and Italy (and particularly its cuisine) plays a leading role in the Chinese people’s preferences.

Within this particular historical-cultural context, the Shanghai Lingang Science and Technology School has the aim of favouring the development of Italian culinary traditions in China and has chosen ICIF as its partner in this initiative, to set up an institute of Italian cuisine, culture and enology for Chinese chefs, sommeliers and maitres. Up to now the first and only authorized institute in China for non-indigenous cuisines.

The school is hosted in a 3500-square metre brand-new building, including:
Computers fitted classrooms for theoretical lessons, a hands-on practical classroom with 24 individual work-stations, a wine-cellar and an olive oil-cellar, an amphitheatre lecture hall, a restaurant, spaces for displaying Italian food and wine products, laboratories for sensorial analysis.

The first courses started in January 2005 and when working at full blast the school will host up to 200 students who will be able to attend different types of courses, from theme and refresher courses for professionals to subjects such as bread, pasta, ice-creams and wine and to year-long courses for young students who wish to live a “made in Italy” experience and become experts in the Italian taste.

This project came true thanks to the collaboration with the Department for the Development of Commerce and Industry of Shanghai and to the contribution of the Italian public bodies that believed in the initiative: The Ministry of Industry and the Region of Piedmont.
