Program
The Course will last four weeks, will take place in Italy and will be divided into two parts.
The first three-week-long part will take place at the new ICIF seat of Frossasco (Torino) and lessons will cover the following subjects:
- Safety on board
- Behaviour and etiquette
- Types of service
- Serving techniques – theory and practice
- Food-and-wine pairing
- Purchases and caboose management
- Menus and types of courses
- Cooking theory and practice
- Waste disposal
The second part will be carried out on board of a sailing yacht and during this stage lessons will be rounded off by practice:
- Practical serving techniques
- Hands-on cooking
- Breakfast service - practice
- Dining-room service - practice
- Enology and food-and-wine pairing - practice
- Banquets and parties
- Behaviour
- Safety and rescue
- Hygiene and study of products
- Etiquette and bon ton, reception
