ICIF Marina

Program

The Course will last four weeks, will take place in Italy and will be divided into two parts.
The first three-week-long part will take place at the new ICIF seat of Frossasco (Torino) and lessons will cover the following subjects:

  • Safety on board
  • Behaviour and etiquette
  • Types of service
  • Serving techniques – theory and practice
  • Food-and-wine pairing
  • Purchases and caboose management
  • Menus and types of courses
  • Cooking theory and practice
  • Waste disposal

The second part will be carried out on board of a sailing yacht  and during this stage lessons will be rounded off by practice:

  • Practical serving techniques
  • Hands-on cooking
  • Breakfast service - practice
  • Dining-room service - practice
  • Enology and food-and-wine pairing - practice
  • Banquets and parties
  • Behaviour
  • Safety and rescue
  • Hygiene and study of products
  • Etiquette and bon ton, reception
