The Professional Sommelier Course with A.I.S qualification has a duration of 90 days: 3 weeks of theoretical-practical lessons in the wine cellar of the Castle of Costigliole d' Asti and a 9-weeks externship ( optional, not included in the enrolment charge)- in starred restaurants, wine cellars or wine bars that collaborate with the ICIF School, or in restaurants with professional sommelier staff.
The aim of the Course is to train professional sommeliers, to provide them with a complete overview of Italian Oenology and to assist them in assimilating the wine-and-food taste and culture of our Country, thus enabling them to propose it once back in their homeland.
The Course, held by professional and qualified AIS teachers, is intended for homogenous groups of foreign students selected by language, who are interested in the subject but have limited available time. Participants will have the opportunity to learn, through a “full immersion” training course of 120 hours, the most important notions relating to the culture of Italian oenology, thereby increasing their knowledge through direct contact with the territory and the “Italian Vineyard”.
At the end of the Course the students receive the Professional Sommelier diploma with AIS qualification and International recognition.
ICIF – Institute of Cuisine, Culture and Oenology of the Regions of Italy – present the new Advanced Courses on wine which include the techniques of tasting and food and wine pairing, aimed at wine enthusiasts everywhere!
The Courses will be held in the prestigious medieval castle of Costigliole d’Asti, headquarters of the school.
This Course has been created for those who have a basic knowledge of wine and the various denominations and would like to approach the experience of food and wine pairing in order to understand the concept of harmony between wine and food. There is a choice of either attending only one of the following ‘two day’ courses or participating in all three courses for a total of 4 days
Short Course A: Food and wine pairing with starters and fish
Short Course B: Food and wine pairing with first courses and main courses of meat
Short Course C: Food and wine pairing with cheeses and desserts
Minimum number of participants required to activate each course: 10
N.B.: the first day of Short Course A, B and C all have exactly the same programme because each course can be bought as a single ‘two day’ package. For those who would like to purchase more than one course, they can attend the 2 full days of the first Course and purchase just the second day of the other remaining courses.
Otherwise, single participants may attend the programmes by joining a course in progress after having checked the dates of the lessons with the ICIF office.

This Course has been created for those who are approaching the subject for the first time and takes place over a period of 5 days, during which the participants follow a path which will bring them close to the colours and perfumes of the world of wine where they will acquire the essential techniques of tasting and food and wine pairing.
This Course has been created for those who are approaching the world of wine for the first time. The Course has a duration of 7 full days and starts with the analysis of the bunch of grapes up to the finished product, the wine, with a very enjoyable final phase of wine and food pairing tests.
The participants will enjoy unique tastes and perfumes, immersed in the pleasant and evocative atmosphere created in the ICIF oenology classroom housed in the ancient cellars of the Castle of ICIF School.
The Course will take place over a period of 2 months and those concerned must join one of the Courses already under way after previously checking the dates with the ICIF office.
