In 2004 ICIF opened a new seat in Brazil, in Flores da Cuhna, where, in cooperation with UCS – University of Caxias do Sul – it has established the Escola de Gastronomia of the Italian Regions.
In this area in the south of Brazil, morphologically similar to Italy, with a strong vocation for vine-growing and the production of good wines, seeing the presence of a large Italian community, ICIF has found the most fertile soil for the setting up of the first school of Italian cuisine and enology in Brazil.
The school covers a surface of 1,600 sqm. and boasts an amphitheatre for lectures, a practical laboratory with fully equipped individual work stations, a professional kitchen with a restaurant open to the public, a wine-cellar, a show-room, a library and a shopping corner for Italian products.
The school offers different types of courses, from the ones for gourmets and wine lovers to professional l courses for chefs and sommeliers who wish to deepen their knowledge.
